Aiyu, a sake that has been passed down through generations
Aiyu Sake Brewery was founded in the first year of Bunka (1804) at the end of the Edo period. The history of the brewery began when Kanehira Joshichi, who had previously been making koji, started brewing sake. At that time, Itako flourished as a transit point for transporting goods from Tohoku to Edo, and many people involved in water transportation came and went there. Mitsukuni Tokugawa had a red light district built there, and it was also known as a red light district. It is said that at the end of the Edo period, brave warriors who wanted to force the Shogunate to expel Joi gathered from all over the country and drank ``Aiyu'' in the red light district.
From locally produced sake rice and water

Itako is a land blessed with water such as Lake Kasumigaura, Kitaura, and the Hitachitone River, and has been a rice production area since ancient times, and today Koshihikari, Ichibanboshi, and the sake rice ``Gohyakumangoku'' are produced. Aiyu Sake Brewery uses locally produced Gohyakumangoku rice and spring water from the same vein as the Omoido well at Oo Shrine in the city. We have inherited the techniques from Nambu Toji, who were once one of Japan's three major toji groups, and are producing our own unique sake.

Sake brewed with great care
Aiyu Sake Brewery's pride and joy is their Daiginjo sake. Aiyu Junmai Daiginjo Bizen Omachi is made from Omachi, the only sake rice that has been cultivated continuously for over 100 years, and is polished to give it a gorgeous aroma and full-bodied flavor. Aiyu Daiginjo is made from Yamada Nishiki sake rice, polished to 38% and fermented at low temperatures, and is characterized by its fruity aroma and mild flavor. Both brands have received high praise at various sake tasting competitions in recent years, and are making a name for themselves overseas as well.
In addition, ``Kami no Ike'' is a well-balanced, dry sake brewed using water from the pond at Kashima Jingu Shrine (Kashima City), and is offered as a sacred sake at Kashima Jingu Shrine. A dream-like scenery spreads out
Itako is a city of irises. Many tourists visit the Suigou Itako Ayame Festival every year when the irises are in full bloom. The 73rd festival will be held in 2024 from Friday May 17th to Sunday June 16th. Approximately 1 million irises of 500 varieties will be in full bloom in the approximately 1.3 hectare park. The wedding boats that traveled up and down the waterway until around the 1950s will also be revived for a limited time. A real bride selected through public entries will travel down the waterway in a boat while receiving blessings from tourists.
In Itako, wisteria is in full bloom before the irises, and hydrangeas are in full bloom after. Why not visit as many times as you like when the flowers are in bloom?

Kashima Shrine
This is the head shrine of Kashima Shrine, which has around 600 shrines nationwide, and is one of the Kanto region's leading power spots. It is said to have been founded in the first year of Emperor Jimmu's reign (660 BC) and enshrines the god of martial arts.
