Please enjoy the traditional flavor of this long-established miso specialist, who carefully selects ingredients grown in the bounty of the earth and the rich natural environment, and continues to make miso with great care.

Moriyama Soy Sauce
Moriyama Soy Sauce was founded in 1900 and is located in front of the birthplace of poet Hakushu Kitahara. This soy sauce is loved by locals and has been certified as a Yanagawa brand.
Simmered "Eigancho"
A new flavor, stingray, is used in this stew from the Ariake Sea, a treasure trove of seafood. Please enjoy this local dish from Yanagawa.
Yanagawa handmade moromi-shonshon
Moriyama Soy Sauce was founded in 1900 and is located in front of the birthplace of poet Hakushu Kitahara. All processes are handmade, and we use whole soybeans from Yanagawa called "Fukuyutaka." Please enjoy our "Shonshon."
Boiled mackerel (cooked in salted rice‐bran paste)
"Jinda-ni" is a local dish from Kitakyushu, Fukuoka where our hotel chef is from. The fish is simmered until soft, even down to the bone, so you can also get calcium.
