We will be offering a plate full of sea bream from December 1st.
MYSYAYS HOTEL GROUP to which KAMENOI HOTEL ARIMA belongs, is engaged in a variety of initiatives focused on food in order to deliver delicious experiences to its guests.As part of these efforts, the company is working to "strengthen the hotel brand." With this goal in mind, we are holding a cooking competition for cooking and food and beverage staff.
In the competition held on October 19, 2023, the theme was “Food development to reduce food loss.”
Out of a total of 223 chefs from all over the country who submitted entries, the menu created by Naoki Tsuchitori, a chef KAMENOI HOTEL ARIMA was chosen as the winner!

Sea bream head Arima grilled, sea bream balled up with red bean paste, fried sea bream with tatsuta
The sea bream tamajime is topped with red bean paste that resembles the mountains of Arima, and is fried in Tatsuta using the skin of the sea bream, which is usually thrown away.
The sea bream head made with Arima speciality `` Arima Sansho'' to give it a rich flavor.
Chef's comment
With this year's theme of ``Food Development to Reduce Food Loss,'' I was able to use my ingenuity to turn ingredients that I would normally throw away casually into a masterpiece, and I learned a lot from myself. I would like to use this experience to reduce food waste and cook a variety of dishes.
