Habutae mochi
Habutae mochi is a famous Japanese sweet from Fukui that is made by steaming mochi powder and adding sugar and starch syrup.
Enjoy the supple texture, slight sweetness, and the texture of each piece being as thin and smooth as a high-quality silk fabric, and melting in your mouth.
In addition to pure white, kinako, and mitarashi, you can enjoy a variety of seasonal flavors such as chocolate, matcha, cherry blossom, and salt.
Echizen soba
Echizen soba is a local dish representative of Fukui. Unlike regular soba, which is made from only the seeds, it is made from whole-grain flour that includes all the soba husks, so it has a strong buckwheat aroma and flavor, and a dark color. .
It can also be eaten as zaru soba or mori soba, but it is standard to eat soba with a soup stock containing grated radish, or with a soup made by adding raw soy sauce or stock to squeezed radish soup, so it is locally known as ``Echizen''. It is called "oroshi soba".
Eiheiji Sesame Tofu
It is eaten as a vegetarian meal at Eiheiji Temple, the head temple of the Soto sect of Buddhism, a major tourist destination in Fukui uses finely kneaded white sesame seeds to create a chewy and smooth texture.
