"Dengaku" is a local dish from Takamori Town in Oku-Aso where trout, konnyaku, tofu, etc. are coated with a secret recipe of miso, skewered on bamboo skewers, and grilled over charcoal in a hearth.
The name "Dengaku" is said to come from the custom of "Dengaku Mai," a dance performed to pray for a good harvest during the rice planting season during the Heian period.
