This soul food is a representative dish of the Chichibu region, consisting of small, fluffy fried potatoes dipped in a sweet and spicy miso sauce.
Pickled Chinese cabbage
Pickled Chinese cabbage (Taisai) is a local dish from the Chichibu region of Saitama Prefecture. In the Chichibu region, Chinese cabbage is called "Shakushina" because its shape resembles a rice scoop (rice bowl), and it is a representative pickle of the Chichibu region, often eaten with rice.
